Mini Quiches with Gaspacho
A delightful crowd-pleasing appetizer featuring our delicious Mini Quiches served with zesty Gaspacho.
Preparation Time: 15 minutes
Refrigeration Time: 1 hour
- 9 medium tomatoes, diced (9 cups)
- 2 red bell peppers, diced (2 cups)
- 1 cup (250ml) Diced onions
- 1 teaspoon (5ml) Minced garlic
- 2 drop Tabasco
- 2 teaspoon (10 ml) Rice vinegar
- To Taste Salt & Pepper
- Put tomatoes and red pepper in a blender, mix well, add onions and garlic.
- Put aside in a bucket add tabasco, vinegar and seasoning.
- Let cool few hours, serve very cold.
