Mini Quiches served with Gaspacho
Preparation Time: 15 minutes
- 1.5kg Diced tomatoes
- 2 units Diced red pepper
- 1 cup (250ml)Diced onions
- 1 teaspoon (5ml) Minced garlic
- 2 drops Tabasco
- 2 teaspoon (10 ml) Rice vinegar
- Salt & Pepper to taste
- Put tomatoes and red pepper in a blender, mix well, add onions and garlic.
- Put aside in a bowl. Add tabasco, vinegar and seasoning.
- Let cool few hours, serve very cold.
