Mini Quiches served with Gaspacho

Mini Quiche
Serves 6
Preparation Time: 15 minutes

Ingredients

  • 1.5kg Diced tomatoes
  • 2 units Diced red pepper
  • 1 cup (250ml)Diced onions
  • 1 teaspoon (5ml) Minced garlic
  • 2 drops Tabasco
  • 2 teaspoon (10 ml) Rice vinegar
  • Salt & Pepper to taste

Preparation Instructions

  1. Put tomatoes and red pepper in a blender, mix well, add onions and garlic.
  2. Put aside in a bowl. Add tabasco, vinegar and seasoning.
  3. Let cool few hours, serve very cold.
