SPRING SALAD WITH ROASTED RED PEPPER EGG & CHEESE BITES

Roasted Red Pepper Egg & Cheese Bites

A delicious spring—or any time of the year—salad created from red onions, baby spinach, leafy greens and our delicious Roasted Red Pepper Egg & Cheese Bites.

Ingredients

  • 2 Cuisine Adventures Roasted Red Pepper Egg & Cheese Bites
  • 4 Radishes, halved
  • 2 Tbsp (30ml) Red onions, sliced
  • 1 Handful (25g) Baby spinach
  • 1 Handful (25g) Mixed leafy greens
  • 1 Tbsp (15ml) Fresh chives, chopped

Dijon & Honey Vinaigrette

  • 1 Tbsp (15ml) Dijon mustard
  • 1/4 Tsp (1ml) Honey
  • 1/2 Tbsp (7.5ml) Wine vinegar
  • 1/2 Tbsp (7.5ml) Water
  • 1/2 Tbsp (7.5ml) Extra-virgin olive oil
  • Salt & Pepper, to taste

Preparation Instructions

  1. In a small bowl, add the vinaigrette ingredients and whisk until combined.
  2. Heat the Roasted Red Pepper Egg & Cheese Bites according to the packaging instructions.
  3. In a large bowl, toss together radishes, red onions, baby spinach, mixed leafy greens and fresh chives. Add 3/4 of the vinaigrette and carefully mix together.
  4. Divide salad among 2 plates, top with Roasted Red Pepper Egg & Cheese Bites and remaining vinaigrette.
