Mini Quiches served with Gaspacho
Preparation Time: 15 minutes
- 1.5 kg Diced tomatoes
- 2 red bell peppers, diced
- 1 cup (250ml) diced onions
- 1 teaspoon (5ml) minced garlic
- 2 drops Tabasco
- 2 teaspoon (10 ml) rice vinegar
- Salt & Pepper, to taste
- Blend tomatoes and red bell peppers. Add onions and garlic.
- Put aside in a pot, and add tabasco, vinegar and seasoning.
- Let cool for a few hours, serve cold.
