Mini Quiches with Gaspacho
Mini Quiche
A delightful crowd-pleasing appetizer featuring our delicious Mini Quiches served with zesty Gaspacho.

Refrigeration Time: 1 hour
Ingredients
- 9 cups diced tomatoes (about 9 fresh tomatoes)
- 2 cups red bell peppers, diced (about 2 peppers)
- 1 cup (250ml) onions, diced
- 1 tsp (5ml) Minced garlic
- 2 drop Tabasco sauce
- 2 tsp (10 ml) Rice vinegar
- To Taste Salt & Pepper
Preparation Instructions
- Blend tomatoes and red bell peppers. Add onions and garlic.
- Put aside in a pot, and add Tabasco, vinegar and seasoning.
- Let cool for a few hours, serve cold.
