Mini Quiches with Gaspacho

Mini Quiche

A delightful crowd-pleasing appetizer featuring our delicious Mini Quiches served with zesty Gaspacho.

Preparation Time: 15 minutes
Refrigeration Time: 1 hour

Ingredients

  • 9 cups diced tomatoes (about 9 fresh tomatoes)
  • 2 cups red bell peppers, diced (about 2 peppers)
  • 1 cup (250ml) onions, diced
  • 1 tsp (5ml) Minced garlic
  • 2 drop Tabasco sauce
  • 2 tsp (10 ml) Rice vinegar
  • To Taste Salt & Pepper

Preparation Instructions

  1. Blend tomatoes and red bell peppers. Add onions and garlic.
  2. Put aside in a pot, and add Tabasco, vinegar and seasoning.
  3. Let cool for a few hours, serve cold.
